Turkey stewed with dried apricots and chickpeas


Rinse and soak dried chickpeas in cold water for a minimum of 4 hours, it's better do this the day before. You may use canned peas. In this case, you need to warm it up.
Salt and pepper turkey meat on both sides until golden brown. It is better to do this in a pan with a thick bottom. Take out the meat and set aside.
Put the pan on a slowly heat, pour some more oil. Add onion, carrot and celery cut into large pieces and enjoy the process.
Add spices. Put the kettle on until the vegetables are softened.
Put the meat on vegetables, pour boiling water, salt. Bring the water to a boil once again, put the pan on a slowly heat. Cook for 40-50 minutes.
Add dried apricots and chickpeas. Warm liquid will make dried apricots as fresh ones and give all their honey sweetness to the dish.
After giving the finishing touch, cook the stew for another 15 minutes.
