Petto Denatra Duck Breast

Directions:

First of all, you should prepare the sauce. For doing this, rinse berries under running water, allow to drain in a strainer, transfer to a saucepan. Crush berries, add olive oil and water, put on fire, mix.

Bring the mixture to a boil continuously stirring, reduce heat and cook for 10-12 minutes. Do not cover with a lid. Add salt, sugar, garlic, wine. Stir and cook for about 5 minutes, add spices and mix. Keep an eye on density of the sauce. Sieve the ready sauce and cool to room temperature.

Wash the duck breast, dry with napkins. Make incisions in the form of a lattice with a sharp knife from the side of the skin. Cuttings shall only touch the skin. Heat 15 grams of butter in a frying pan (on high heat), fry the breast until golden brown on one side, add 15 grams of oil and fry the breast on the other side. Fry each side of the breast for 3-6 minutes.

Preheat the oven to 180oC. Put the roasted breast to roasting pan and make it bake for 5-10 minutes.

While the breast is baked, cook an apple. Remove the core, cut the peel, divide into slices. Return the frying pan and butter to the fire from the fried duck breast, add the remaining oil, send apple slices to the heated frying pan, sprinkle with half of sugar. Fry for 2-3 minutes, turn over, sprinkle with the remaining sugar and fry (on the other side).

Cut the duck breast into slices. Put slices of breast and caramelized apples on the serving plate. Pour with cranberry sauce, decorate with mint sprigs. Serve immediately.

  • green apple of a winter variety — 1 piece;
  • sugar — 25 g;
  • butter — 50 g;
  • fresh mint - a couple of twigs.

  • ripe cranberries - 100 g;
  • olive oil - 1 tablespoon;
  • water - 200 ml;
  • garlic - 2 cloves;
  • sugar - 1 tablespoon;
  • dried basil - 1 teaspoon;
  • cinnamon - on the tip of the knife;
  • cardamom – a pinch;
  • cloves - 2-3 pieces;
  • red dry wine - 50 ml;
  • salt.
